Now, we know what you're thinking--why pumpkins? Well, besides being delicious and nutritious, pumpkins have a long and storied history. Did you know that pumpkins were once used as a form of currency by Native Americans? That's right, you could buy land with pumpkins!πŸŽƒ
And who could forget the classic movie "It's the Great Pumpkin, Charlie Brown"? For many of us, this Halloween special is a beloved childhood memory. So, whether you're carving a jack-o-lantern or making pumpkin bites, pumpkins are a symbol of fall festivities and childhood nostalgia.
This National Pumpkin Day, we’re paying tribute to this humble vegetable and sharing one of our favorite recipes –the delicious Pumpkin & Protein Bites with the added benefits of our Collagen Belly Burn supplement.
Pumpkin & Protein BitesπŸŽƒ
- 1 1/4 cup old-fashioned oats
- 1/4 cup hemp hearts or flaxseed
- 1 tbsp chia seed
- 8 scoops of Healthful Seasons Collagen Belly Burn
- 1 tsp pumpkin pie spice
- 3 chopped dates
- Pinch of salt
- 1/2 cup almond butter
- 1/4 cup canned pumpkin
- 2 tbsp maple syrup
- 1/2 tsp vanilla
- 1/2 cup chocolate of choice, melted
- 1 tbsp coconut oil

1. Melt chocolate and coconut oil together in the microwave in 20 sec. intervals, stirring frequently.
2. Scoop about 2 tbsps. of dough at a time and roll into 16 balls.
3. Add wet ingredients (except for the oil) and mix until a dough forms.
4. Add dry ingredients (except for the chocolate) to a food processor and blend.
5. Dip each ball in the melted chocolate using a fork.
6. Place on parchment paper and refrigerate. Bites can be stored for one week in the fridge or 3 months in the freezer.

Nutrition facts per serving: Calories 191, Total Fat 5.7 grams, Fiber 4.6 grams, Protein 8.5 grams.

This recipe yields 8 servings and takes 15 minutes to prepare.
